More Jamaican Brown Stew Chicken

The 3-way ratio of how lazy I am in the kitchen, to how simple this recipe is, to how friggin great it tastes is a very well balanced ratio.  I fully admit that I hate cooking which is probably why I’m still single, but I LOVE eating so I cook to eat.  Unfortunately I’m stuck in Canada right now and haven’t had a good Jamaican meal in forever.

I’ve blogged about brown stew chicken in the past, back when I had my own place in Jamaica and I think that one dining experience still tops ALL the rest.  You can read about it HERE.  It was chicken that dreams are made of.

Yesterday I had a serious craving for Jamaican brown stew chicken.  It’s in my top three favorite Jamaican dishes and I needed to have it so I got on Google looking for a recipe I haven’t tried yet.  There are only two ways for me to get good Jamaican food on the regular:  1.  Marry a Jamaican and lock him inside to cook for me forever, or 2.  Find good recipes to try.

Yesterday…..I found one.  On the Cook Like A Jamaican website.

WHERE have they been all my life?  And why had I never found them yet?  If all of their recipes are as simple as this one I’m pretty sure I’ll become an addict.  My whole apartment reeks of YAAD right now and I’m in heaven.

So here’s the picture of my finished product still in the pot and below the picture I’ll tell you how I modified their recipe to suit my tastes.  And I paired mine with plain white rice.  It’s still my favorite with gravy dishes.

My modifications to the recipe:

  • Probably my most major modification was that I didn’t use real chicken.  I used vegetarian chicken.  Just my personal preference.  I only eat real chicken if it’s fried simply because I can’t give up fried chicken!
  • I didn’t marinate overnight because I was too hungry to wait.  I marinated for just over an hour but next time it will be overnight.  It can only taste better than it already did!
  • I didn’t have ketchup in the house so I substituted BBQ sauce which added an extra kick.
  • And last but not least I seasoned with lemon pepper.  I needed a little more ZING to the already savory flavor.  Next time I might squeeze some actual lemon juice into it.
  • If you like darker gravy you can add browning.  Most Jamaicans I know add it to this dish.

 

That’s pretty much all I changed up and I’m sure you can change up whatever you want but at the end of the day this meal was cooked and eaten in under an hour.  That’s totally my kind of kitchen experience….low impact on my day LOL.
